Let’s get into some good old american tradition and nail down this deliciously sinful recipe, Mac n Cheese. A good Mac and Cheese is all about the creamy cheese sauce and a little crust on top. Too often, the dish, is baked till its dried out and curdles. The cheese is crucial to this recipe. For best flavor, I like extra sharp Cheddar. I combined the pasta with the sauce and broil the top to achieve the crispy top instead of putting it in the oven.

Serves 6 – 8

Ingredients

2 Cups of Bread Crumbs
8 Tablespoons of unsalted Butter
1 Pound of Pasta
6 Tablespoons of all purpose Flour
1/4 Teaspoon of Cayenne powder
5 Cups of milk
4 Cups of Sharp Cheddar
Salt
Black pepper

Instructions
Mix bread crumbs and 3 tablespoons of butter
Boil pasta with 1 tablespoon of salt till tender
Melt remaining 5 tablespoons of Butter into pot over medium heat
Add Flour, 1 Teaspoon salt and Cayenne, whisk constantly until deepens in color, about 1 minute
Gradually whisk in milk; bring mixture to boil, whisking constantly
Reduce heat and add gradually add in the Cheddar
Stir in the Pasta and season to taste
Pour the pasta mixture into the container
Sprinkle the bread crumb mixture on the pasta
Throw it into the broiler for 5 minutes until golden brown

Tips

– Cherry Tomatoes and Sweet Basil would add a little punch and zing
– Caramelized onions would be fun too!
